Quinoa, Apple & Muntrie Salad

Ingredients: 

1 cup of cooked quinoa 

1 cup of cooked or roasted Wattleseeds 

1 Lebanese cucumber 

1 cup chopped parsley 

1 cup chopped spinach 

½ cup crumbled feta cheese

½ cup of freeze-dried or fresh Muntries 

1 diced green apple 

Dressing: 

Juice of half a lemon 

1 tsp Dijon mustard 

¼ cup Olive oil 

1 tsp dried dill

Salt & Pepper  


Method:

In a large mixing bowl, combine the cooked quinoa and cooked wattleseeds. Stir to evenly mix the base of the salad.

Chop the Lebanese cucumber into small, bite-sized pieces and add it to the bowl. Add the chopped parsley, chopped spinach, crumbled feta cheese, dried Muntries, and diced green apple to the quinoa and wattleseeds. Gently toss everything together until well combined.

In a small bowl, whisk together the lemon juice, Dijon mustard, olive oil, dried dill, salt, and pepper until the dressing is well emulsified.

Pour the dressing over the salad and toss gently to ensure all the ingredients are coated with the dressing.

Serve the Quinoa & Wattleseed Salad with Muntries immediately for a refreshing and nutritious dish.
