Muntrie Jam

Ingredients

250g fresh or frozen Muntries

100g brown sugar

2 tbsp lemon juice

1 tbsp water

Method

In a medium-sized saucepan, combine the Muntries, brown sugar, lemon juice, and water.

Place the saucepan over medium heat. Stir the mixture occasionally until the sugar has dissolved completely.

Once the sugar has dissolved, reduce the heat to low. Allow the mixture to simmer gently, stirring occasionally to prevent sticking. Continue simmering for about 15-20 minutes, or until the Muntries have softened and the mixture has thickened to a jam-like consistency.

To test if the jam is ready, spoon a small amount onto a chilled plate. If it sets and wrinkles slightly when pushed, the jam is ready. If it's still runny, continue simmering for a few more minutes and test again.

Once the jam has reached your desired consistency, remove the saucepan from the heat and let it cool slightly. Pour the jam into sterilized jars, seal tightly, and allow it to cool completely before storing.

Enjoy your Muntrie Jam spread on toast, scones, or as a delightful accompaniment to cheese platters!
