Crunchy Muntrie Chocolate Bars
Ingredients:
200g dark chocolate
⅓ cup tahini
½ cup roasted sesame seeds
½ cup roasted sunflower seeds
½ cup roasted pumpkin seeds
½ cup dried muntries
¼ cup hemp seeds
¼ cup activated buckwheat (buckinis)
pinch sea salt
Method:
In a heatproof bowl, melt the dark chocolate over a pot of gently simmering water, stirring occasionally until smooth. Alternatively, you can melt the chocolate in the microwave in short 20-second bursts, stirring between each burst until fully melted. Once the chocolate is melted, remove it from the heat and stir in the tahini until well combined.
In a large mixing bowl, combine the roasted sesame seeds, roasted sunflower seeds, roasted pumpkin seeds, dried Muntries, hemp seeds, buckinis, and a pinch of sea salt. Pour the chocolate-tahini mixture over the dry ingredients and stir everything together until all the ingredients are evenly coated with the chocolate.
Line a square or rectangular baking dish with parchment paper. Pour the mixture into the dish and spread it out evenly, pressing down firmly to ensure the mixture is compact. Place the baking dish in the refrigerator and let the mixture chill for at least 2 hours, or until the chocolate has fully set.
Once set, remove the mixture from the dish by lifting the parchment paper. Place it on a cutting board and cut into bars or squares. Enjoy your Choc Muntrie Bars as a nutritious snack or treat. Store any leftovers in an airtight container in the refrigerator to keep them fresh.
