Wattleseed Crackers
Ingredients:

1 cup flax seeds
2 cups other combined seeds (wattleseed, pepitas, hemp, sesame)
1 cup boiling water
3 tbsp extra virgin olive oil
½ tsp cumin
½ tsp garlic salt
½ tsp ground coriander seeds
Salt & pepper
Method:
Preheat your oven to 160°C and line a baking tray with parchment paper.
In a large mixing bowl, pour the boiling water over the flax seeds. Stir to combine, then let the flax seeds sit and absorb the water for about 15 minutes. This will allow the flax seeds to thicken and form a gel-like consistency.
After 15 minutes, add the other mixed seeds, including wattleseed, pepitas, hemp, and sesame, to the soaked flax seeds. Stir to distribute the seeds evenly.
Add the cumin, garlic salt, ground coriander, salt, and pepper to the mixture, and mix well to incorporate the spices evenly throughout the seeds.
Drizzle the extra virgin olive oil (EVOO) over the seed mixture and stir until everything is well combined, forming a cohesive dough-like mixture.
Spread the seed mixture evenly onto the prepared baking tray, pressing it down with the back of a spoon or your hands to create a thin, even layer. Aim for a thickness of about 3-5mm (1/8 inch) for crispy crackers.
Place the baking tray in the preheated oven and bake for about 45-60 minutes, or until the crackers are dry, firm, and lightly golden. Rotate the tray halfway through for even baking.
Once the crackers are fully baked, remove them from the oven and allow them to cool on the tray for a few minutes. Then, break them into desired-sized pieces.
Serve the wattleseed crackers with your choice of cheese and a dollop of Muntrie jam for a delicious and unique snack or appetizer. Enjoy!
