Dark chocolate muntrie delights
Ingredients:
125g dark chocolate
1 pomegranate, seeds (ruby red arils) removed
½ cup freeze dried muntries
sprinkling of muntrie powder (for a finishing touch if desired)
Method:
In a heatproof bowl, melt the dark chocolate over a pot of gently simmering water, stirring occasionally until smooth. Alternatively, you can melt the chocolate in the microwave in short 20-second bursts, stirring between each burst until fully melted. Once the chocolate is melted, remove it from the heat and gently stir through the pomegranate seeds until they are covered in melted chocolate.
Next stir through the freeze dried muntries until all the ingredients are evenly coated with the chocolate.
Line a square or rectangular baking tray with parchment paper. Put one tablespoon of the mixture onto the tray, making sure all the pomegranate and muntries are touching each other. Repeat until all of the mixture has been decanted on the tray into small morsels.
Place the baking dish in the refrigerator and let the morsels of delight chill for at least 2 hours, or until the chocolate has fully set.
You can also add a finishing touch of sprinkled muntrie powder on top, as per the photo above.
Once the dark chocolate is set, enjoy the morsels straight from the fridge. The combination of cold dark chocolate, the juice of the pomegranate seeds and crunch of the freeze-dried muntries will create a taste explosion in your mouth.
